Thanks for posting that Mac and Chees recipe idea. Can I suggest you also try using either Raclette or Mimolette Cheese instead of the Edam? I only say this because Mimolette is slightly more aged Edam and between 6 to 9 months you get this amazing sweet nutty taste. And Raclette is just sexy when its melted. Or maybe try blending the Mimolette and the Edam. Can you tell I'm getting a bit hungry now lol x

Oh I love raclette, when it’s all melted and you have it with new potatoes and stuff. My god. I’m sure mimolette would also be great. I’d also make it with a Swiss cheese like gruyere or emmental; I’m pretty sure that would be rocking. I chose edam partly because I wanted to tick it off the 1796 list, and also partly because it’s an easy cheese to pick up at any supermarket.
