Oh I love raclette, when it’s all melted and you have it with new potatoes and stuff. My god. I’m sure mimolette would also be great. I’d also make it with a Swiss cheese like gruyere or emmental; I’m pretty sure that would be rocking. I chose edam partly because I wanted to tick it off the 1796 list, and also partly because it’s an easy cheese to pick up at any supermarket.
